VINTAGE 2019: The 2019 harvest began about ten days later than in previous years and decreased by 15 to 20% compared to 2018. After years of great heat in final maturity, where sugar accumulation was privileged over flavor accumulation, we finally had a year where the low temperatures combined with the high temperature fluctuations allowed for excellent accumulation of dyes and good acidity.
Despite the heavy rains in May, the grapes were healthy and sparse, therefore particularly suitable for drying. The wines carry more territorial expressions of greater longevity and freshness.
THE VINEYARD: Location: in the heart of the Soave Classico region, on the foothills of the hill formations with volcanic soils at 80 meters above sea level.M vineyard greening. Educational system: Modified pergola Veronese.
Age of productive vines: 20-30 years. Eyes per hive: 22. Planting density: 2,500 vines per hectare. Yield per hectare: 84 hl.
THE PRODUCTION Harvest: End of September. Mashing with grapes, gentle membrane pressing. Fermentation without shells at a controlled temperature of 14-16 °C and storage in stainless steel tanks. Stabilization: Protein and tartar.
