Combination | Mea Culpa is served with tender beef roulades with a delicious filling consisting of pickled prunes, a few slices of lardo, steamed onions, chopped parsley and roasted pine nuts. The prunes are pre-seasoned for a few days in a mix, one-third each of dry sherry, rum and water. The plum marinade will later add, next to a hefty dash of red wine, the sauce. Serve as a side dish with fresh almond broccoli or beetroot vegetables and homemade gnocchi or hand-chopped spaetzle |
