Moramora Malvasia Nera Salento PGI

Considered one of the great native Salento vines, Malvasia Nera has always shared the vineyard with Negroamaro and, in many cases, also the fermentation process in many Salento designations of origin, including Salice Salentino DOC and Brindisi DOC. Its unmistakable aromaticity gives a touch of particular value in blends of well-known mention.

PRODUCTION AREA: Rural area of San Donaci in the province of Brindisi.

TRAINING SYSTEM: Cordon-spurred

TERRAIN: Medium dough

PLANTING DENSITY AND YIELD: 4500 plants per hectare and 2 kg of grapes per plant

GRAPE HARVEST: The harvest is carried out in the early hours of the morning, in the coolest hours of the day

WINEMAKING: After harvesting, the grapes are destemmed and the crushed grapes ferment in stainless steel at a controlled temperature of 22-24°C for 8-10 days. The must undergoes several pumping over and delestage that offer a technological extraction of color and tannins. Subsequently, the wine is racked in a soft press. After the first racking, always in stainless steel, malolactic fermentation takes place

MATURATION: 3 months in second and third passage French oak barrels

VOL.%: 14,50° alc.

TASTING NOTES: Intense ruby red colour. On the nose, it offers small red fruits such as blackberries and mulberries in full ripeness. Hints of wilted plums and sweet spices give an enveloping tertiary perception. The finish is long, soft and with silky tannins.
