PRODUCTION AREA: rural area of Salento in an area exposed to the winds of the Ionian and Adriatic Seas, extending from the province of Taranto to Brindisi
TRAINING SYSTEM: traditional 50-year-old Apulian sapling, with short pruning, with two-bud spurs to enhance the resources of the cultivation fund
SOIL: medium texture
PLANTING DENSITY AND YIELD: 4500 plants per hectare, yield is 1.2 kg per plant.
GRAPE HARVEST: Manual harvesting is carried out in the early hours of the morning. The bunches are lovingly placed in small crates of about 5 kg, thus preserving their integrity. The delivery to the cellar is very careful and is carried out with particular speed so that the grapes can express their maximum potential.
WINEMAKING:After harvesting, the grapes are destemmed and the crushed grapes ferment in steel at a controlled temperature of 25 °C for 8-10 days. Maceration on the skins lasts 12-15 days, with careful pumping over and final soft pressing of the pomace.
MATURATION: 3 months in steel, 12 months in American and French oak barrels and 3 months in bottle.
VOL.: 14.5° alc.
TASTING NOTES: Ruby red color with garnet reflections. On the nose, it shows a breadth of illustrious elegance. Praiseworthy spices fade into jammed, sweet and candied fruits. Orange peels dipped in dark chocolate are a more than surprising treat. Blackberries, mulberries and raspberries are a juicy, summery touch. The finish is reminiscent of cocoa with small notes of cappuccino. The sip is decidedly voluminous. The tannins, particularly soft and enveloping, create a balance of the senses in perfect harmony. With a long and persistent finish, it masterfully satisfies all the senses.
